AMRITSARI RAU FISH CURRY 

 


INGREDIENTS:

Rau fish
chilly powder
haldi
ginger garlic paste
salt
oil
mustard
onion
tomatoes
chilly powder
dhania powder
jeera powder
little methi powder
tamrind
coriander leaves


METHOD:

Marinate the fish with chilly powder, haldi, ginger garlic paste, salt.. shallow fry it after 1 hour.
In a kadai put oil,mustard ,onion when it turns to pink add tomatoes, then add chilly powder, dhania powder, jeera powder, little methi powder, salt, make a fine gravy then add the fry fish to the gravy & cook for 10 min. u can also add tamrind, it's optional, garnish with coriander leaves

RAGADA PATTISE BY NANDINI PAI

RAGADA PATTISE

Ragda Pattise

INGREDIENTS FOR PATTISE :

6 medium size potatoes
Boiled,peeled& mashed
3 tsp corn flour
2 tsp coriander powder
1/2 tsp jeera powder
1tsp garam masala powder
1 tsp red chilli powder
Salt to taste or 1 tsp

Method- mix all the ingredients and make small pattise
Heat 4 tbsp oil on a tawa and shallow fry these pattise keep aside

For Ragda-1 cup dry peas( matar) soaked over night
1/2 tsp mustard seeds
A pinch of hing
1 onion finely chopped
Curry leaves
Tomato puree(4-5 tomatoes boiled,peel and grind)
1green chilli paste
2 tsp ginger and garlic paste
1/2 tsp haldi
1 tsp red chilli powder
1 tsp jeera powder
2tsp coriander powder
11/2 tsp salt
1tsp garam masala
Coriander leaves( finely chopped)
Pressure cook peas and keep aside.

Heat 2 tbsp oil in a kadhai add mustard seeds and hing curry leaves then add onion and stir fry till ut turns to light brown.. Then add ginger garkic pastr green chilli paste. Then add red chilli powder, garam masala powder,haldi,corianderjeera powder and mix well cook on a low flame..then add tomato puree and coik for 2-3 mints add cooked peas salt and coriander leaves add water and mix well and coik covered on low flame for 5 mints.and remove from the fire.

Green chutney-1/2 bunch poodina leaves
1 cup coriander leaves
2 green chillies
2 green chillies
1 onion chopped
1 tbsp lemon juice
11/2 tsp sugar
1/2 tsp salt
A pinch of black salt or chat masala
Grind all ingredients together to smooth paste..add water because consistency of green chutney for chat is quite thin.

Dates& tamarind chutney
Dates 7-8 seedles
Tamarind seedless lemon size
Jaggery lemon size( make powder)
1/2 tsp dry ginger powder
1/2 tsp jeera powder
A pinch of garam masala
1/4 tsp redchilli powder
1/4 tsp black salt or chat masala
Soak tamarind in 2 cups water and mash well to extract all juices ( need thick tamarind water)
Grind dates to a smooth paste
In a pan add imli water, dates paste jaggery ,red chilli powder.stir fry bring to a boil simmer for 2 mints.add other ingredients mix well.Boil simmer for 5-7 mints. Remove from the fire and cool.
To serve
Place 2 pattise in a plate.Pour some ragda over it. A spoon of green chutney and dates tamarind Chuteny garnish with chopped onion and coriander leaves and sev serve immediately.

RAGI MUDDE MASSAPO WITH GREEN CURRY BY SHAMALA BHAT

GREEN CURRY PERFECT COMBINATION TO GO WITH RAGGI MUDDE..!


GREEN CURRY FOR RAGI MUDDE

Set 1:
Mixed greens: Around 250gms (I have used a mix of dill, amaranth, fenugreek, Indian spinach, huli soppu*) green bajji and if u want use other banjo like chakotha
Toor dal/Split pigeon peas: 1/3rd cup
Onion: 2 medium sized
Tomato: 2 medium sized
Garlic: 4 pods
Green chilies: 6-8 nos, more or less
Brinjal: 1 no, optional
Turmeric: a big pinch

Seasoning:
Salt: According to taste

For spice paste:
Coconut scraped: 1-1.5tbsp, fresh or frozen
Chilli powder: 1 tsp, optional
Tamarind: a big grape sized
Cumin seeds: 1 tsp

For tempering:
Oil: 1 tbsp
Mustard seeds: 1/2 tsp
Cumin seeds: 1/2 tsp
Garlic: 3 pods, minced
Curry leaves: 6-8 nos

* I do not know what is it called in other regional languages or in English

Method:

Wash the greens thoroughly in water. Chop them & keep aside.
Chop the onions, tomato & brinjal(if using) into 1 inch cubes.
Wash the dal in running water.
Mix all the ingredients mentioned in set 1 along with 2 cups of water.
Pressure cook it for 2-3 whistles. Reduce the heat after 3 whistles & cook for another 3-5 minutes.Turn off the heat.
Let the pressure cooker cool.
Warm the cumin seeds/jeera for a minute.
Blend together the ingredients mentioned for spice paste. Make a smooth paste & scoop out the paste to a clean bowl.
When the pressure is released from the cooker, remove the greens mixture & mash it well using a masher/hand blender or using a mixer.
Heat a big pot. Add oil to the pot, followed by the ingredients mentioned for the tempering. When garlic gives out the aroma, add the spice paste to it & cook it for a minute.
Throw in the mashed dal-greens mixture, followed by salt. Boil it on a medium heat for about 10minutes.
Serve it hot with rice, papad or ragi mudde/finger millet balls.

CHICKEN TAWA FRY

Ingredients for the masala: 
1 big onion chopped lengthwise, 
1 tsp kasuri methi, 
1 tsp ginger-garlic paste, 
1 tsp red chilli pwdr., 
1\2tsp haldi pwdr, 
1 tsp lime juice, 
1 tbsp tandoori chicken masala pwdr,, 
1\2 tsp jeera pwdr, 
salt, 
1 tbsp tomato sauce, 
1 tsp chopped dhania patta,
a few roasted cashews, oil 

Ingredients for marinating Chicken :
5 chicken tangdi(drumsticks with slits) to be marinated with 1tbsp ginger-garlic paste, 
salt, 
paste of 3 roasted dry red chillies and 1 inch tamarind for 2hrs. 

Method: Heat oil in a deep bottomed pan and fry the marinated chicken till golden brown entirely n keep aside. In another pan heat 1tbsp oil, add onions, saute well, put ginger-garlic paste, kasuri methi, red chilli powder, haldi powder, tandoori masala, jeera powder, add the fried chicken, check salt, add tomato sauce, stir till well coated wid masala, cook fr abt 5-7 mins on low flame till chicken mixture's well blended, top with roasted cashews n chopped dhania patta.

MALAI SANDWICH BY REKHA SANAL

BENGALI SWEETS SPECIAL TO TRY OUT TODAY...!!


MALAI SANDWICH

Malai Sandwich Recipe
Ingredients
Milk - 500 ml
Khova - 75 gms
Sugar - Half cup + Half cup
Vinegar - 1-2 spoons
Water - 2-3 cups
Elaichi - 1 or 2
Yellow food color - 1 pinch
Almonds n Cashew Nuts - for garnish
For khova
You can either use store bought khova or can use homemade. 
If using store bought, bring the contents of packet to room temperature. For that keep the packet outside refrigerator for 30 minutes or more. 

Now in a pan, crumble the khova. Put the flame in medium and mix well with a spatula so it dont stick to bottom. when ghee starts leaving add half cup of sugar. mix well so that sugar dissolves. Add a pinch of yellow food color. 

Switch off the flame and remove into a bowl and allow it to cool.

For Rasgullas:
In a vessel, boil milk. When it comes to boil add the vinegar and stir well. 
Switch off the flame and remove the chenna on a muslin cloth. discard the whey. run the chenna under tap water so that acidic taste is removed.

 do it one or 2 times. press hard so that all the water gets removed. now tightly close the cloth and hang it for half an hour.
After half an hour, remove on to a plate and crumble it. now knead it well with the heels of your hand and make four rasgullas out of the chenna. 


In a bowl, heat water, sugar and elaichi. once sugar dissolves, reduce flame and carefully drop the rasgullas. 

Depending on size, cooking time varies. if you following same recipe, 6-7 minutes are enough for it to get cooked. Allow it to get cooled.

For Malai Sandwich
Now carefully take each rasgullas and cut into half. Be careful not to break it. so slowly cut with a sharp knife. Now do the same with the rest three.

Apply a little water on your right hand fingers and also on the left palm and take required khova and make a ball and flatten it.

Now place the khova disk in between the cut rasgullas. Garnish with khova, sliced almonds and cashew nuts according to your wish

Now place them in refrigerator and allow it to cool for close to an hour. Now take them out atleast half an hour before serving

Notes:
1. With half litre milk, you can make 4 medium sized Malai Sandwiches.
2. I used store bought khova. somewhere around 75 gms would be enough
3. If making khova at home, time taken will be more. but i feel taste would be more or less the same
4. The syrup for rasgullas can be like 1 glass water to half cup suar. the rasgullas need not fully be immersed in syrup. just that the shape wont be round but it will have a disk shape which is what we want for sandwich and the syrup anyhow we are not using later so dont waste making lots.
5. Rasgullas has to be carefully cut with a sharp knife else it will break. For this you may slightly press them and remove sugar syrup. hold it firm but not so hard in between your fingers and cut slowly.
6. Khova will be a little sticky thats why we need to apply water to make it a ball and then to disk. if its too watery, you can carefully drop on the first slice of rasgulla and then place top piece.
7. Once you garnish or when you are going to serve, drop 4-5 drops of sugar syrup on top of the malai sandwich. It will melt in your mouth.

CHILLI POTATOES BY NANDINI PAI

THIS IS ONE OF THE DISHES WHICH CROSSED THE MAXIMUM LIKES IN AV..!!


CHILLI POTATOES

INGREDIENTS :

4 potatoes
3spring onion- white part finely chopped,greens for garnishing
Green chilies-2(u can add more)
4-5 garlic cloves(crushed)
Soya sauce-1tsp
Tomato ketchup-3tbsp
Vinegar Itsp
Salt
Batter-1/2 cup maida
1/2 cup corn flour
Salt to taste(1/2 tsp)
1/2 tsp pepper powder
1/2 tsp soya sauce
A pinch orange colour

Method-
Wash and peel potatoes and cut like finger chips.. Soak them in clod water with salt and lemon juice for 15 minutes strain and wipe dry on clean cloth.sprinkle some corn flour on them it will absorb exess water.
Mix all the ingrediens of batter add just enough water to make a batter of pourig consistency. Keep aside 10 mints rest. Dip the potatoes and deep fry in hot oil...allow it cool..and deep fry it again.. Heat 1 tbsp oil in a pan.add whites of spring onion,stir fry till light brown..add green chillies and garlic.stir fry till brown..add soya sauce,tomato sauce,add fried potoes mix well add vinegar mix well...check salt add if needed (..as soya contains salt)garnish with greens of spring onions.. Serve..
