GULKHAND PEDA'S BY SANDHYA KINI MAYENKAR

DELICIOUS KESAR PEDA , PERFECT SWEET FOR ANY OCCASION..!!!


GULKHAND PEDA 

INGREDIENTS :

2 cups grated Khoya (mava)
1/2 cup powdered sugar
1/4 tsp cardamom (elaichi) powder
2 tsp gulkhand paste
Few drops of raspberry red colour
½ cup mix dry fruits like cashewnuts and almonds coarse powder

METHOD :

1. Combine the khoya and powdered sugar in a heavy bottomed pan and cook on a slow flame, while stirring continuously till the sugar has dissolved and the moisture has evaporated (approx. 6-7 minutes).
2. Mix the cardamom powder in the khoya mixture, Remove from the fire 
3. divide the mixture into two equal parts and allow it to cool completely.
4. Add the gulkhand to one part and allow to cool completely. It will look brown in colour. 
5. Add the food colour to the other part to make the red colour mixture for outer layer. Mix well and allow it to cool completely.
6. Roll out the khoya mixture separately in between two sheets of plastic to form a rectangle of 100 mm. x 150 mm. (4" x 6"). They should be more or less of the same size. 
7. Spread the coarsely powdered dry fruits powder on the dark brown mixture and tightly roll the brown rectangle. 
8. Place the brown roll on top of the red rectangle and tightly roll it again so that the red layer is outside and the brown layer is inside the roll. You will have a long thick roll with you. Cover it with a plastic film tightly
9. Roll the cover tightly and refrigerate till firm (approx. 10 minutes) and then remove the plastic sheet or cling film.
10. Cover completely and cut into thin slices.
11. Garnish each slice with additional dry fruits for show.
