RED VELVET CAKE WITH BUTTER CREAM BY SANDHYA KINI MAYENKAR

READY TO BAKE FOR BIRTHDAY PARTIES THEN THIS IS SOMETHING YOU MUST HAVE IN YOUR MENU..!



RED VELVET CAKE 

Ingredients :

100 grams maida
100 gms amul butter
150 gms sugar powder
2 eggs
3 tsp milk
½ tsp vanilla essence
½ tsp baking powder
½ -1 tsp raspberry red colour

Method:

1. Preheat the oven at 180 degrees for ten mins. Sift the maida mixed with baking powder twice n keep aside.
2. melt the butter in a saucepan on a low flame and keep it to cool.
3. Beat the eggs and sugar powder together for about 10 mins. add the milk and vanilla essence. keep aside
4. Once the butter has cooled fully, fold in the sifted maida n baking powder. Then add the egg and sugar mixture n fold in the same direction till it forms a uniform smooth batter.mix in the essence and the colour. 
5. Carefully pour in the papercups and bake at 150 degrees centigrade for 30-40 mins.
For the cream frosting: this was given to me by smita reddy
3 tbsp plain flour
½ cup milk
½ cup thick cream
1 cup icing sugar
1 cup butter
½ tsp vanilla essence

Method: 

In a pan, mix the milk, cream and ass the flour to it and mix really well so that there are no lumps and the mixture is smooth
Place this pan over low heat and keep stirring continuously till the mix thickens. It will take just a minute. Turn off the heat and let it cool. 

Meanwhile beat the butter and icing sugar in a separate bowl till light and fluffy then to this add the cooked flour mixture and the vanilla essence and wisk well preferably with a hand blender till it really frosts. 


You may even add any food colour of your choice to decorate. Pour into piping bag and frost. Decorate your cake with your imagination. Any left over frostings will last for a good 8-10 day in the fridge
