RASPBERRY MANGO PUDDING BY SANDHYA KINI MAYENKAR

RASPBERRY MANGO PUDDING

Ingredients:

1 cups mango pulp
250 ml cold milk
4 tbsp custard powder
3 tbsp sugar
1/2 cup fresh cream

Ready made raspberry jelly mix
Few tutty fruity to garnish
Few apple slices and mango pcs to garnish

Method:

1. Dissolve the custard powder in 1/4 cup of cold milk and keep aside.
2. Whisk the cream in a bowl along with powdered sugar to make soft peak and keep aside.
3. Heat a pan, add the remaining milk and when the milks boils, add the sugar and stir for a couple of minutes.
4. Add the milk mixed with custard powder and stir again for few seconds.
5. Add the mango puree and stir for a minute and cook till custard becomes thick. Once cool
6. Add 2 tbsp of fresh cream and mix well.
7. Pour it in a bowl and chill for 2-3 hours.

Meanwhile prepare the jelly as per by dissolving the jelly crystals in 1 ½ cup of hot water. Once it mixes thoroughly then add another 1 ½ cup of cold water to it. Pour into jelly moulds and keep in fridge for 2-3 hrs.
Serve jelly along with the mango custard topped with fruits of your choice
