CHENNAI BRIYANI BY SOUMYA KAMATH

CHENNAI BRIYANI


INGREDIENTS:

onion
pudina
corriender leaves
1/2 cup coconut milk
1 cup basmati rice (glass measurement)
1 spoon ghee

Make a paste
ginger
garlic
green chilly
dalchini
1 star anise
2 cardamoms
1/2 spoon pepper
1 spoon badi shepi
1 spoon jeera
1 spoon coriander

Marinate chicken
ginger garlic paste
chilli powder
turmeric
coriander jeera powder

METHOD:

Fry onion in little oil till golden brown in cooker …
Add salt and paste cook till oil separates out…
Add pudina and coriander leaves  … now add chicken and mix for some time …
Add 1 cup of water and cook till half done …
Add little garam masala powder… u can adjust spices and salt at this point of time…
Add basmati rice , ½ cup coconut milk , ½ cup water let it come to boil ..
Close the cooker and wait for 1 whistle biryani is done …
Add 1 spoon ghee on top ..


HINT: We need 2 cups of water or liquid for 1 cup of basmati rice... it is always 1:2 ration rice: liquid ... 
u will get perfect biryani ...
