TOMATO CHUTNEY BY REKHA SANAL

TOMATO CHUTNEY

INGREDIENTS:

shallots
tomatoes
coconut oil
chilli powder
salt
turmeric
mustard
curry leaves
dry red chillies

hing( Asafetida)

This can be prepared in two ways –one easy and another time consuming(tastes best and you see in this picture).

Time consuming first one
Take equal quantity of shallots and tomatoes. cut the shallots thin and the tomatoes small pieces. now in a kadai, add some coconut oil, put shallots, fry them till golden color, add some chilli powder and salt and turmeric (according to your taste buds) and once the masalas cook, put the tomatoes and cook till its done. now u leave it for sometime to cool and then grind it to paste. now you can use same kadai, add oil, put mustard, curry leaves and dry red chillies and splutter them and now add a little hing, and then add the ground paste.

Second way which is easy –

Cut shallots and tomatoes same way. splutter mustard seeds, curry leaves, dry chillies and add shallots, fry till golden and add chilli powder, turmeric powder and salt and hing. ground the tomatoes to paste- now once shallots are done, add the ground paste. now mix everything and give a nice boil.

I love first way, but mornings in order to make it easy i go for second method…
