METHOD:
fry 2 tab sp coconut + 4 to 5 pepper corns in coconut oil ..... wen coconut turns reddish..add red chilli powder (2 teasp) + corriander powder(3 teasp) + methi seeds (1/4 teasp) +haldi (1/2 teasp) .... remove it and keep aside....
again fry some 10 to 12 cloves of garlic and 5 to 6 small onions chopped in lil oil ....u just need to fry dem till get an aroma...no need of making dem red ...... remove and keep it aside....
now grind the first set f fried ingrdents smoothly ....lastly add d fired garlic n shallots...and again grind it to a smooth paste.....DO NOT add single drop of water.........
pressure cook tur dal ( 1/4 cup or even less dan dat ) ..... add d veggies (except onion and ladys finger) .......and pressure cook....
heat oil n a kadayi...add mustard ..curry leaves ..one or two broken red chillies.....saute well....add sliced onion ..tomatoes and d ladys finger...... fry till dey r soft.... add d grinded paste....add salt..n saute well..add 2 spoon of any sambar powder.... add cooked dal and veggies..... .
add tamarind pulp..... sufficnet water..... a small piece of jaggery..... let it boil n turn offf.........
dis s her sambar recipe....... i just luv dis..bit tym takingprocess ...but worth d effort.....
i adapted d same process...but added only shallots and tomates...sauted one onion tooo....
