CARROT AND KHAJOOR CAKE BY SANDHYA KINI MAYENKAR


CARROT AND KHAJOOR CAKE 

INGREDIENTS:

100 gms maida
100 gms amul butter
1 grated carrot
150 GMs sugar
50gms chopped dates
1/2 tsp vanilla essence
1/2 tsp baking powder
2 eggs
1/2 tsp cinnamon powder
2-3 tbsp milk

METHOD:


melt the butter in an aluminium vessel on low flame n keep aside. Mix the sugar and eggs in a mixer n keep aside. Sift the maida with the baking powder twice. Preheat the oven at 150* C for ten mins. Slowly add the sifted maida little by little to the melted butter and keep mixing in one direction. Don't beat the mixture. U have to do it slowly and softly. Then little by little add the egg n sugar mixture n keep stirring. Mix in the vanilla essence cinnamon powder n milk. Lastly add  carrot n chopped dates. Make sure that there are no lumps. Pour in a greased tin n bake at 150*C for 40 mins. Cool n serve
