CHICKEN CAFREAL BY SANDHYA KINI MAYENKAR


A very famous goan dish and a Portuguese delicacy ... make it and taste the difference

CHICKEN CAFREAL 

INGREDIENTS:

Cafreal is usually prepared with large pcs of chicken legs or breast pcs
4 pcs of chicken
7 - 8 Green Chillies
8 Stocks Coriander leaves.
2 inch piece of Ginger
13 - 14 Flakes of Garlic
1 Table spoon Khus Khus
7 Peppercorns
1 Big Piece Cinnamon
1 Teaspoon Jeera
1/2 Teaspoon Haldi
A Small ball of Tamarind
4 - 6 Cloves
Juice of one large lemon
Cooking oil for shallow frying and salt to taste


METHOD:

• Wash the chicken well and pat dry. Now rub all over with the lime/ lemon juice mixed with salt to taste. Pour remainder of juice over the chicken and allow it to sit for 30 minutes.
• While the chicken is in the lime juice, grind all the other ingredients together into a thick paste. mix in the salt in the paste. your paste should be a strong blend of sourness spicy and a strong tangy flavour. 
• Apply this paste all over the chicken, cover and allow to marinate in the refrigerator for 8-10 hours.
• Heat the oil in a shallow thick bottom pan. fry the chicken, on a low flame. Sprinkle sum water ( maybe 1-2 spoons optional) over chicken if u feel that its getting burnt. You can also grill the chicken if you so prefer. Cook till done and the chicken starts to leave out the oil. 
• Serve piping hot with a fresh green salad and pav.
