A very famous goan dish and a Portuguese delicacy ... make it and taste the difference
CHICKEN CAFREAL
INGREDIENTS:
Cafreal is usually prepared with large pcs of chicken legs or breast pcs4 pcs of chicken
7 - 8 Green Chillies
8 Stocks Coriander leaves.
2 inch piece of Ginger
13 - 14 Flakes of Garlic
1 Table spoon Khus Khus
7 Peppercorns
1 Big Piece Cinnamon
1 Teaspoon Jeera
1/2 Teaspoon Haldi
A Small ball of Tamarind
4 - 6 Cloves
Juice of one large lemon
Cooking oil for shallow frying and salt to taste
METHOD:
• Wash the chicken well and pat dry. Now rub all over with the lime/ lemon juice mixed with salt to taste. Pour remainder of juice over the chicken and allow it to sit for 30 minutes.• While the chicken is in the lime juice, grind all the other ingredients together into a thick paste. mix in the salt in the paste. your paste should be a strong blend of sourness spicy and a strong tangy flavour.
• Apply this paste all over the chicken, cover and allow to marinate in the refrigerator for 8-10 hours.
• Heat the oil in a shallow thick bottom pan. fry the chicken, on a low flame. Sprinkle sum water ( maybe 1-2 spoons optional) over chicken if u feel that its getting burnt. You can also grill the chicken if you so prefer. Cook till done and the chicken starts to leave out the oil.
• Serve piping hot with a fresh green salad and pav.
