MILK BARFI BY SOUMYA KAMATH

MILK BARFI


INGREDIENTS:

6 Cups of milk
1 lemon
½ cup sugar
Cardamom powder
2 table spoon butter

METHOD: 


In a big thick non stick pan add 6 cups of milk to boil ... to this add 1 lemon juice so that it starts becoming paneer but this process should be slow (try to add less of lemon juice or else the sweet will become sour) ... keep boiling so that all the water evaporates ... it will take about 15-20 mins time ... now add 1/2 cup of sugar and cardamom powder and start mashing it with spatula ... mix it well add 2 tablespoon of butter ... mix for some more time till light cream color ... now transfer it on to plate... garnish it with almonds and keep refrigerated for 1 hr ... now u will be able to cut it into pieces and serve ...

TIPS:  

even if the milk does not turn into paneer as we should use very little lemon juice still the sweet will be tasty... if the milk becomes paneer just taste the water and discard 1 cup of water at this stage and continue process of cooking...
