COCONUT MILK PULAV BY VATHSALA KAMATH

INGREDIENTS:
Normal or basmathi rice 1 cup.. If basmathi, soak it for an hour, drain the water and keep aside.
Onions 2 finely chopped
Mixed vegetables of your choice 1 cup
Ginger garlic green chillies to be ground along with spices like cinnamon, cloves and elaichi.. I grind but you can use the whole spices as well.
Lot of mint leaves finely chopped
Salt as per taste
Coconut milk ratio 1:2
 

METHOD:
Take oil/ghee in a pan (I have used oil). Saute onion till light brown. Add the ground ginger garlic spices paste.. fry well. Add the vegetables. Fry for 2 mins. Then add the rice/soaked rice if basmathi and mint leaves, salt and coconut milk.. Cook till done.. Serve hot
