SOOJI KACHORIS BY RAJASHREE ACHARYA KAMATH

STUFFING - 1 boiled & mashed large potato+ 2 chopped green chillies+ 1/2 tsp Chaat masala+ salt. Mix thoroughly.

METHOD - Heat 1 cup water. Add 1/2 cup coarse semolina, 1 tsp carom seeds (Ajwain),1 tsp oil & li'l salt. Stir it continuously on med. flame till it forms a dough. Remove from heat.
Heat oil for deep frying. Grease your palms with oil.Take a small portion of the dough when warm, shape it like a cup, fill a small portion of the stuffing & immediately close it. Shape it into a kachori. Make these kachoris in batches & simultaneously deep fry. Have hot with tea.Remember the dough should be warm,otherwise when cold, it is difficult to shape it.
